Tasty Black Bean Stew

   
Recipe
2 Cans of Black beans in water
Rotel Mild
Trinidad Mild Hot Sauce
2 cloves of Garlic
Trinity(mix of green peppers, white onions you can pre purchase or roughly 1 med white onion and 1/4 green pepper)
2 Cloves of Garlic chopped(use microplane if desired)
Beef, chicken, or pork(not neccessary) cut into bite size
Salt, Pepper, Oil


Directions:
Brown meet with salt and pepper, remove from pot
Lower heat, cook onions and green peppers in pot, using black bean juice to deglaze pan, cook until translucent
Add garlic and hot sauce(this is based on heat preferance, no less than a tablespoon)and cook for only a few minutes
Add rotel, beans and meat back to pot
Simmer for 20 minutes on med heat, stiring occasionally
Reduce heat and cook until meat and tomatoes are similar color to bean broth and beans are soft(aprox 2 hours)

If you are in a rush you can turn the heat up and but you have to stay and stir, also keep broth on hand in case it gets to dry because it can become mortar if it gets to dry.

Serve with fresh chopped onions and a dollop of sour cream. You can also cook it down to make a great burrito filling!

I love this recipe. It  was introduced to me by a friend in college. It was the only "meal" he knew how to cook. Its easy, low in fat, and a meal in a bowl or great as a side. Without the meat it makes about 4 to 5 servings, with the meat about 8.  It keeps really well and reheats perfectly.
